Delicious Grilled Chicken Caesar Salad Recipe for Date Night

Today we're all about a ridiculously delicious grilled chicken caesar salad. Don't be fooled by the salad part, you're gonna love this. On the heels of the much-loved one pan fajita recipe, we did people thanking us for doing something a little lighter but with no less flavor. We're starting by making our own croutons because they're super effing delicious and they look better. Then, we move on to making the dressing from scratch. It's a combination of olive oil, lemon juice, dijon mustard, worcestershire sauce, garlic, and shredded parmesan cheese. Your taste buds are already excited, right?

Ingredients:

  1. Baguettes
  2. Olive oil
  3. SPG (salt, pepper, garlic powder)
  4. 3/4 cup of olive oil
  5. Juice of 1 lemon
  6. 1 tablespoon of dijon mustard
  7. 1 tablespoon of Worcestershire sauce
  8. 1 large clove of garlic
  9. 1/4 cup of shredded parmesan cheese
  10. Pinch of salt
  11. Crushed croutons
  12. Chicken breast
  13. Romaine lettuce
  14. Additional parmesan cheese for topping

Cooking steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Rip the baguettes in half and tear them into desired crouton size. Place them on a baking sheet.
  • Drizzle olive oil over the torn baguettes and sprinkle SPG seasoning. Toss to coat evenly.
  • Bake the croutons in the preheated oven for approximately 10 minutes or until crispy.
  • In a container, combine olive oil, lemon juice, dijon mustard, Worcestershire sauce, garlic, shredded parmesan cheese, and a pinch of salt. Stir well.
  • Crush some of the homemade croutons and add them to the dressing. Stir again.
  • Flatten the chicken breast to an even thickness and season with salt and pepper.
  • Heat a pan over high heat. Add a little of the dressing oil to the pan.
  • Cook the chicken breast on the hot pan until cooked through, about 4-5 minutes per side.
  • Let the chicken rest for a couple of minutes before cutting it into cubes.
  • Cut the romaine lettuce into bite-sized pieces.
  • In a large bowl, combine the romaine lettuce, homemade croutons, and dressing. Toss well to coat.
  • Top the salad with the grilled chicken cubes and sprinkle additional parmesan cheese.
