Ingredients:
- 150 grams onion
- 5 cloves of garlic
- 30 grams olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 carrot
- 3 stalks of celery
- 1 zucchini
- 1 capsicum
- 1 can of tomatoes (can use crushed or diced)
- 150 grams red lentils
- Stock paste
- Fresh thyme (or dried)
- Smoked paprika
- Chili powder (adjust according to desired spiciness)
- Water
- 20 grams lemon juice
Cooking steps:
- Start by chopping 150 grams of onion and 5 cloves of garlic in a food processor. Use the pulse function to achieve a finely chopped consistency.
- In a large cooking pot, heat 30 grams of olive oil over medium heat. Add the chopped onion and garlic mixture and sauté for 4 minutes.
- Sprinkle 1 teaspoon each of cumin and coriander onto the onion and garlic mixture. Stir well and cook for an additional minute.
- Add 1 carrot, 3 stalks of celery, 1 zucchini, and 1 capsicum to the pot. Stir to combine all the ingredients.
