Mediterranean Chickpea Burgers Without a Food Processor + Homemade Tzatziki Recipe
If you're looking for a quick and easy vegetarian dish, these Mediterranean chickpea burgers are perfect for a weeknight dinner. What's even better is that you don't need a food processor to make them! Packed with classic Mediterranean flavors, these burgers are sure to satisfy your taste buds.
To start, we'll make a quick tzatziki sauce for the topping. Peel and grate one large cucumber, then combine it with plain Greek yogurt, garlic, extra virgin olive oil, and seasonings. Let the tzatziki sit in the fridge for the flavors to meld together.
Next, prepare the burger mixture. In a bowl, mash canned chickpeas with a potato masher, leaving some texture. Add diced onion, parsley, garlic, and a mixture of egg, olive oil, tahini, lemon juice, cumin, chili flakes, salt, and pepper. Stir in panko breadcrumbs to bind the mixture.
Divide the mixture into equal patties and cook them in a skillet until crisp and browned. Serve the chickpea burgers on buns, in pitas, or on their own, topped with the homemade tzatziki sauce. Enjoy the delicious combination of flavors and textures!
