How to Make Homemade Cream of Chicken and Cream of Mushroom Soup

There are two main reasons why you should make these staple ingredients at home. First, by making them yourself, you have complete control over the ingredients. Let's take a quick look at the list of ingredients in a standard cream of chicken soup from the store. It contains modified cornstarch, wheat flour, cream, chicken meat, vegetable oil, seasoning, and various artificial flavors and preservatives. On the other hand, when you make it at home, you can use organic or non-organic ingredients according to your preferences.
The second reason to make your own cream of soups is that it's much cheaper. A small can from the grocery store can cost around $1.98, and most recipes require at least two cans. By making it at home, you can save money while enjoying a healthier version of these classic soups.
One of the bonuses of knowing how to make things from scratch is that you are empowered to create dishes even when you run out of certain ingredients. Now, let's get started with the recipes!
Cream of Chicken Soup Recipe:
Ingredients:
- 6 tablespoons of butter
- 6 tablespoons of flour
- Homemade chicken stock or broth
- 1 cup of milk (your choice)
- 1/2 teaspoon of black pepper
- 1 teaspoon of garlic salt
Instructions:
1. Melt the butter in a pot and add flour to create a roux. Cook for about two minutes to eliminate the raw flour flavor.
2. Pour in the homemade chicken stock and stir until the flour bits dissolve.
3. Add the milk of your choice and continue stirring until the mixture thickens.
4. Stir in the black pepper and garlic salt.
5. Transfer the cream of chicken soup to jars for storage.
Cream of Mushroom Soup Recipe:
Ingredients:
- 6 tablespoons of butter
- 8 ounces of mushrooms, finely chopped
- 6 tablespoons of flour
- Homemade chicken broth
- 1 cup of milk (your choice)
- 1/2 teaspoon of black pepper
- 1 teaspoon of garlic salt
Instructions:
1. Melt the butter in a pot and add the chopped mushrooms. Cook until the mushrooms release their moisture and it evaporates.
2. Add in the flour and cook for about two minutes.
3. Pour in the chicken broth and the milk, and stir well.
4. Add the black pepper and garlic salt.
5. Cook for a few more minutes until the soup thickens.
6. Your homemade cream of mushroom soup is ready to be enjoyed.
Please note that these soups cannot be canned due to the presence of dairy. They can be stored in the refrigerator for up to five days or used immediately.
