Even though there's been a crab shortage lately, I'll be using pasteurized canned crab, which is a great alternative. In addition to crab, you'll need cheeses, Worcestershire sauce, garlic, and fresh breadcrumbs to create a delicious filling.
To start, we'll clean 12 large mushrooms with a damp paper towel, avoiding rinsing them under water to prevent sogginess. Then, remove the stems and scoop out some of the insides to make room for the filling. Pre-bake the mushrooms for 10 minutes in the oven to ensure the filling and mushrooms cook evenly. Once pre-cooked, brush them lightly with melted butter.
For the filling, you'll need softened cream cheese, shredded Parmesan, Worcestershire sauce, chopped fresh parsley, chopped green onions, finely chopped garlic, crab meat, fresh breadcrumbs, grated Parmesan cheese, Tabasco sauce, and Old Bay seasoning. Mix all the ingredients well, ensuring the cream cheese is fully incorporated.
