Ingredients:

  1. 1 cup (246 grams) canned pumpkin puree
  2. 2 tablespoons heavy cream
  3. 2 tablespoons brown sugar
  4. 2 tablespoons granulated sugar
  5. 1/2 teaspoon pumpkin pie spice
  6. Pinch of salt
  7. 1 large egg
  8. Homemade or store-bought pie crust

Cooking steps:

  • In a mixing bowl, combine the canned pumpkin puree, heavy cream, brown sugar, granulated sugar, pumpkin pie spice, salt, and one large egg. Whisk until well combined and set aside.
  • Roll out the pie crust on a lightly floured surface to about 1/8 inch thick. Use a pumpkin-shaped cutter to cut out the pie crust. Gather the scraps, re-roll, and cut more pumpkins.
  • For jack-o-lantern hand pies, use a paring knife to carefully cut faces into some of the pie dough pieces.
  • Spoon some of the pumpkin mixture into the middle of half of the pumpkin-shaped pie dough pieces. Be careful not to overfill.
  • Prepare an egg wash by whisking one whole egg with a splash of whole milk. Brush the egg wash onto the edges of the pie dough with the pumpkin filling.
  • Place a second piece of pie dough on top and line it up with the bottom piece. Press the prongs of a fork into the perimeter of the pie dough to seal it.
  • For plain pumpkins, poke a few holes in the top to allow steam to escape. Brush the tops of the hand pies with more egg wash.
  • Bake at 400°F (204°C) for 20 to 25 minutes or until golden brown.
