Ingredients:
- Beef
- Salt
- Pepper
- Oil
- Garlic
- Onion
- Bacon
- Flour
- Guinness
- Coffee
- Tomato paste
- Chicken stock
- Carrots
- Thyme
- Bay leaves
- Potatoes
Cooking steps:
- Salt and pepper the beef.
- Heat oil in a pot and brown the beef.
- Remove the beef from the pot.
- Dice garlic and onion, sauté them in the same oil.
- Add chopped bacon and cook until browned.
- Add flour and mix well.
- Pour in Guinness, stirring until combined.
- Add coffee, tomato paste, chicken stock, carrots, thyme, and bay leaves.
- Return the beef to the pot, bring to a simmer, cover, and cook for 1.5 hours.
- Add potatoes, cover, and cook for an additional 35-40 minutes.
