Delicious Pick Me Up Cake | Chocolate Coffee Creamy Tiramisu Cake Recipe

Note: For a cappuccino twist, simply add a couple of tablespoons of the coffee mixture to the Mascarpone cheese before spreading it on top of the cake.
Ingredients:
- 100 grams caster sugar
- 75 grams soft brown sugar
- 175 grams unsalted butter, softened
- 6 tablespoons milk
- 3 tablespoons coffee
- 175 grams self-raising flour
- A big pinch of salt
- 60 grams dark chocolate, chopped
- 250 grams Mascarpone cheese
- 2 tablespoons icing sugar
- Optional: chopped walnuts for topping
Cooking steps:
- In a bowl, combine caster sugar, soft brown sugar, and softened butter. Beat for a couple of minutes until creamy.
- In a cup or glass, warm up 6 tablespoons of milk in the microwave for 30 seconds. Add 3 tablespoons of coffee and let it dissolve.
- Add large eggs, self-raising flour, salt, and the Milky coffee mixture to the butter-sugar mixture. Beat for a minute until smooth and creamy.
- Mix in the chopped dark chocolate and beat for another 10 seconds.
- Preheat the oven to 180°C (160°C fan). Grease and line a loaf tin.
- Pour the cake batter into the prepared tin and smooth the top.
- Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
- Once the cake is baked, remove it from the oven and let it cool completely.
- In a separate bowl, combine Mascarpone cheese and icing sugar. Mix until smooth.
- Spread the Mascarpone cream mixture on top of the cooled cake.
- Optionally, sprinkle some chopped walnuts on top.
