Classic Cherry Clafoutis Recipe | Easy French Dessert with Fresh Cherries
If you absolutely love cherries and are looking for different ways to use them, I'm gonna show you one of the most amazing desserts of all time. It's a classic French recipe known as the clafoutis. It's loaded with cherries and is incredibly easy to make. The easiest way I could define this recipe is it's like a combination of a flan and Dutch baby pancake. It's super fluffy, it is just amazing. We need to start off with a little bit of prep though, beginning with those cherries. Sound good? Let's bake.
I've got a bunch of fresh cherries and they are always in season in the summer and into those early fall months. So what we first need to do is rinse them off, because oftentimes they're pretty dirty. So head right over to your sink, get some cold water, and spray 'em off really, really well. This is important, not just to clean them, but because we're actually gonna put some sugar on 'em and it's gonna help stick to 'em as well. Once they are cleaned off, we are heading right over to a bowl and then we need to simply pick off the stem. This is not hard to do, it's kinda like picking green beans, no big deal, but make sure you pick off every single stem of the cherry, or else it's not gonna look good and it sure as heck isn't gonna taste good.
And while this recipe classically uses cherries, you could absolutely use blueberries, raspberries, blackberries, or any combination of those three. According to some of the earliest recipes in the 19th century, you actually would leave the pit in the cherry. And this is because the cherry is part of the stone fruit family and stone fruits are part of the almond family. They are intertwined. So you'll get this amazing almond flavor come out in the middle of cooking this clafoutis. However, nobody wants to take a bite of it and then take the pit out of a cherry. So what I'm gonna do, I'm gonna pit 'em just to be safe and because I don't wanna crack a tooth on a pit.
Now what I'm gonna do is sweeten the cherries up with a little bit of sugar. The amount will depend on how sweet or how tart your cherry is. Give 'em a taste so you'll know how much to put in. I put in about three tablespoons here and it's the perfect amount. Now at this point what we're gonna do is make our batter. In a large bowl, combine whole milk, granulated sugar, all-purpose flour, sea salt, and a little bit of vanilla extract. Add four large eggs and one additional yolk. Whisk the ingredients together until the batter is completely smooth.
Next, choose a baking dish of your preference. Butter the pan generously to ensure easy removal and browning of the clafoutis. Pour the sugared cherries into the pan and flatten them out. Then pour the batter over the cherries. The dish should be filled to the top, as it will rise slightly while baking. Preheat the oven to 375 degrees Fahrenheit and bake the clafoutis for approximately 40 minutes, or until the outer edges are brown and the center is set.
Once baked, let the clafoutis cool on a rack for about 20-25 minutes before serving. Dust the top with powdered sugar for a beautiful finishing touch. The clafoutis can be served as a whole or sliced for individual servings. Enjoy the fluffy texture and the burst of cherries in each bite. It's a delightful dessert that is meant to be enjoyed warm.
This clafoutis recipe is a true classic and requires simple ingredients like flour, eggs, milk, sugar, and cherries. Give it a try and you won't be disappointed. It's a homemade treat that surpasses store-bought desserts. Follow the steps and enjoy the deliciousness!
