  2. Onion

  4. Fresh thyme
  5. Rosemary
  6. Sage
  7. Tricolor bell peppers
  8. Cremini mushrooms
  9. Shiitake mushrooms
  10. Garlic powder
  11. Salt
  12. Pepper
  13. Herb de Provence
  14. Chickpeas
  15. Flax egg
  16. Coconut milk
  17. Tomato paste
  18. Vegan Worcestershire sauce
  19. Liquid smoke
  20. Nutritional yeast
  21. Crushed walnuts
  22. Cooked quinoa
  23. Vegetable stock
  24. Cayenne pepper (optional)
  25. Puff pastry sheet
  26. Almond milk
  27. Sugar

Cooking steps:

  • In a skillet placed on medium heat, add coconut oil, chopped onion, garlic, fresh thyme, rosemary, and sage. Also add finely chopped tricolor bell peppers. Sauté for about three minutes until the onions are translucent.
  • Add finely chopped cremini and shiitake mushrooms. Continue to sauté until the mushrooms are cooked.
  • Season with garlic powder, salt, pepper, and herb de Provence. Mix everything together for another minute.
  • In a separate bowl, crush chickpeas in a food processor. Add flax egg, coconut milk, tomato paste, vegan Worcestershire sauce, liquid smoke, nutritional yeast, crushed walnuts, cooked quinoa, vegetable stock, cayenne pepper (optional), salt, and pepper.

  • Roll out the puff pastry sheet on a floured surface. Shape the ground beef paste into a thick sausage shape and place it on the pastry.
