Ingredients:

  1. 150 ml or grams of water
  2. 250 grams of sugar
  3. 250 ml of cream (35% fat)
  4. 50 grams of butter
  5. 260 grams of dried dates
  6. 400 ml of water
  7. 7 grams of bicarbonate of soda
  8. 100 grams of caramel sauce
  9. 260 grams of white caster sugar
  10. 75 grams of butter
  11. 1 teaspoon of vanilla extract
  12. 3 eggs
  13. 260 grams of self-raising flour

Cooking steps:

  • In a heavy-based pan, combine the water and sugar. Bring to a simmer over medium-high heat, stirring occasionally.
  • Once the mixture turns golden brown, slowly add the warmed cream while whisking continuously.
  • Cook for 1-2 minutes until the sauce is smooth and all the butter has been incorporated. Set aside in a heatproof container.
  • Remove the stones from the dates and simmer them in 400 ml of water for 5 minutes. Remove from heat and add bicarbonate of soda. Stir and let cool.
  • Mix 100 grams of caramel sauce into the date mixture.
  • In a mixing bowl, cream together caster sugar, butter, and vanilla extract. Add eggs one at a time, mixing well after each addition.
  • Fold in self-raising flour until incorporated. Gently fold in the date mixture.
  • Pour the batter into a pre-lined baking tray and bake at 175 degrees Celsius (350 degrees Fahrenheit) for 1 hour or until a skewer comes out clean.
  • Let the sticky toffee pudding cool on a wire rack. Serve warm with warm caramel sauce and your choice of ice cream.
