Ingredients:
- 150 ml or grams of water
- 250 grams of sugar
- 250 ml of cream (35% fat)
- 50 grams of butter
- 260 grams of dried dates
- 400 ml of water
- 7 grams of bicarbonate of soda
- 100 grams of caramel sauce
- 260 grams of white caster sugar
- 75 grams of butter
- 1 teaspoon of vanilla extract
- 3 eggs
- 260 grams of self-raising flour
Cooking steps:
- In a heavy-based pan, combine the water and sugar. Bring to a simmer over medium-high heat, stirring occasionally.
- Once the mixture turns golden brown, slowly add the warmed cream while whisking continuously.
- Cook for 1-2 minutes until the sauce is smooth and all the butter has been incorporated. Set aside in a heatproof container.
- Remove the stones from the dates and simmer them in 400 ml of water for 5 minutes. Remove from heat and add bicarbonate of soda. Stir and let cool.
- Mix 100 grams of caramel sauce into the date mixture.
- In a mixing bowl, cream together caster sugar, butter, and vanilla extract. Add eggs one at a time, mixing well after each addition.
- Fold in self-raising flour until incorporated. Gently fold in the date mixture.
- Pour the batter into a pre-lined baking tray and bake at 175 degrees Celsius (350 degrees Fahrenheit) for 1 hour or until a skewer comes out clean.
- Let the sticky toffee pudding cool on a wire rack. Serve warm with warm caramel sauce and your choice of ice cream.
