- 1 whole chicken
- 8 ounces softened butter
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Pinch of kosher salt
- Pinch of black pepper

- Zest of 1 lemon
- 3 large cloves of garlic
- 1 tablespoon soy paste
- Lemons (for the bed)
- Vermouth or white wine
