Ingredients

  • 2 tbsp (30ml) cold water
  • 7 oz (200ml) milk
  • 7 oz (200g) whipping cream

  • 1 tsp (5g) vanilla extract

For Raspberry Panna Cotta:

  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) cold water
  • 5 oz (150g) fresh or frozen raspberries
  • 2 tbsp (30g) sugar
  • 1 tsp (5g) lemon juice
  • 1/3 cup (80ml) milk
  • 2 tbsp (30g) sugar
  • 7 oz (200g) whipping cream

For Serving:

  • Raspberry sauce
  • Fresh raspberries

Preparation Steps

  1. Prepare Vanilla Layer:

    • Bloom the gelatin by mixing it with cold water and letting it soak for 5-10 minutes.
    • Combine milk, whipping cream, and sugar in a pot. Heat until it simmers (do not boil).
    • Remove from heat and stir in vanilla extract. Let cool for 5 minutes.
    • Add bloomed gelatin to the warm mixture and mix until completely dissolved.
    • Spray cannele silicone molds (⅓ cup capacity/mold) with flavorless oil.
    • Divide the mixture evenly among the molds. Refrigerate for about 2-4 hours to set slightly.
  2. Prepare Raspberry Layer:

    • Bloom another 1/2 tbsp of gelatin in 2 tbsp of cold water.
    • Cook raspberries with sugar and lemon juice over medium heat. Bring to a boil and simmer for 3-5 minutes.
    • Sieve to remove seeds, obtaining raspberry puree.
    • In a separate pot, combine milk, sugar, whipping cream, and the raspberry puree. Bring to a simmer (do not boil).
    • Add bloomed gelatin and mix until dissolved.
    • Pour raspberry panna cotta over the slightly set vanilla layer.
    • Refrigerate for at least 4 hours, or overnight, to set completely.
  3. Serve:

    • Unmold the panna cotta gently.
    • Serve with raspberry sauce and fresh raspberries for garnish.
