Ingredients:
- 1 onion, chopped
- 2 small onions, chopped
- 1.5 liters of water
- 3 black peppercorns
- Olive oil
- 1 carrot, cut
- 1 stalk celery, chopped
- 1 clove of garlic, minced
- 1 can of diced tomatoes
- 2 cans of white beans
- 2 tsp dried basil
- 1 tsp dried oregano
- Salt, to taste
- Pepper, to taste
- 100 g spinach
- Parmesan cheese, grated
Cooking steps:
- In a large pot, combine the chopped onion, small onions, and water. Add the black peppercorns. Bring to a boil, then reduce to medium heat and cook for 30-40 minutes.
- In a separate pan, heat olive oil over medium heat. Add the chopped large onion and sauté until translucent.
- Add the carrot, celery, and garlic to the pan. Sauté until the vegetables are tender.
- Remove the vegetables and peppercorns from the pot with the broth.
