Quinoa & White Bean Veggie Burger Recipe
Hey guys! It's pretty late at night, but I had to redo my intro for this recipe video because there's more information I want to share with you. This Quinoa & White Bean Veggie Burger is not only delicious but also a great source of protein, dietary fiber, and essential vitamins and minerals.
Ingredients:
- 1 cup of quinoa
- 1 cup of water
- 1 teaspoon of garlic powder and thyme
- 1 15 ounce can of white beans (Great Northern beans recommended)
- 1 cup of oat flour (or other flour of your choice)
- 1 cup of corn
- 1 red bell pepper (or chalat)
- Juice of 1 lemon
- 1 teaspoon of paprika
- 2 teaspoons of thyme
- Salt and pepper to taste
Cooking steps:
- Cook the quinoa by combining it with water, garlic powder, and thyme. Simmer for 15 minutes and let it sit for 10 minutes.
- Preheat the oven to 375 degrees Fahrenheit or heat a skillet on medium to medium-high heat.
- In a large bowl, mash the white beans to your desired texture. Add the cooked quinoa, corn, red bell pepper, chalat (or red onion), lemon juice, paprika, and thyme. Mix well.
- Slowly add the oat flour (or your preferred flour) until the mixture is well combined.
- Form the mixture into patties of your desired size.
- If baking, place the patties in the oven for 30 minutes, flipping them halfway through. If using a skillet, heat the patties for four to five minutes on each side.
- Serve the patties as burgers, crumbled on salads, or wrapped in your favorite bread or tortilla.
