Chipotle Sweet Potato Burritos Recipe

Start by preheating your oven to 425 degrees and lightly greasing a baking sheet. In a ziplock bag, toss diced sweet potatoes with olive oil, chili powder, and ground cumin. Spread the coated sweet potatoes on the baking sheet and bake for 30 minutes until tender. In a skillet, sauté onions, garlic, and minced chipotle peppers. Add black beans and cook until heated through. Assemble the burritos with the black bean mixture, sweet potatoes, and shredded cheddar cheese. Bake for 10 minutes until the cheese melts. Serve with sour cream for a smoky and savory delight.
Ingredients:
- 2 sweet potatoes, peeled and diced
- 1 tablespoon olive oil (plus more for greasing)
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 diced onion
- 2 crushed garlic cloves
- 2 chipotle in adobo peppers, minced
- 1 can black beans, drained and rinsed
- 2 cups shredded cheddar cheese
- 1 diced avocado
- Juice of 1 lime
- 8 10-inch flour tortillas
Cooking steps:
- Preheat your oven to 425 degrees and lightly grease a baking sheet.
- In a ziplock bag, combine diced sweet potatoes, olive oil, chili powder, and ground cumin. Shake to coat.
- Spread the coated sweet potatoes on the prepared baking sheet. Bake for 30 minutes or until tender.
- In a large skillet, heat olive oil over medium-high heat. Sauté diced onions until soft and translucent.
