Delicious Spelt Based Mediterranean Pizza Recipe // Vegan

The dough is also sweetened with natural coconut nectar for a slow, steady rise in blood glucose levels. If you can't find coconut nectar, maple syrup will work just fine. Ingredients:
- 1 UK cup of spelt flour
- 250 ml warm water
- 2 teaspoons of active dry yeast
- 2 tablespoons of coconut nectar
- pinch of salt
- 2 tablespoons of olive oil
- 1 roasted red pepper
- 3 sun-dried tomatoes
- 8 black olives
- 1 garlic clove
- fresh parsley
- 2 tablespoons of tomato paste
- 1/2 teaspoon of smoked paprika
- 1/8 teaspoon of chipotle paste
- 1 tablespoon of liquid smoke
- 1 tablespoon of olive oil
- salt
- pepper
- 200 grams of vegan smoked flavor block
- 100 grams of vegan Greek white block
- sliced green and black olives
- sliced mushrooms
- cherry tomatoes
- fresh basil
- micro rocket leaves
Cooking steps:
- In a bowl, combine 1 UK cup of spelt flour, 250 ml warm water, 2 teaspoons of active dry yeast, and 2 tablespoons of coconut nectar. Cover and let sit for 20 minutes until bubbles form.
- Add 1 cup of spelt flour, a pinch of salt, 2 tablespoons of olive oil, and another cup of spelt flour. Mix well.
- Cover the dough and let it rise for about 1.5 hours.
- Divide the dough into two portions and let them rest for 30 minutes.
- Meanwhile, make the roasted red pepper sauce. Blend 1 roasted red pepper, 3 sun-dried tomatoes, 8 black olives, 1 garlic clove, fresh parsley, 2 tablespoons of tomato paste, 1/2 teaspoon of smoked paprika, 1/8 teaspoon of chipotle paste, 1 tablespoon of liquid smoke, 1 tablespoon of olive oil, salt, and pepper until smooth.
- Roll out the dough to your desired shape and thickness.
- Spread half of the roasted red pepper sauce onto one pizza dough. Add toppings: 100 grams of vegan smoked flavor block, 50 grams of vegan Greek white block, sliced olives, sliced mushrooms, cherry tomatoes, fresh basil, salt, and pepper.
- Repeat the process for the second pizza dough.
- Place the pizzas on an oiled baking tray and bake at 200 Celsius for 12 minutes.
- Garnish with micro rocket leaves before serving.
