Delicious Eggplant Rollatini Recipe with Marinara Sauce

Ingredients:
- Eggplant
- Italian seasoned breadcrumbs
- Panko breadcrumbs
- Salt
- Pepper
- Canola oil
- Ricotta cheese
- Mozzarella cheese
- Pecorino Romano cheese
- Fresh basil
- Fresh parsley
- Garlic
- San Marzano tomatoes
- Extra virgin olive oil
Cooking steps:
- Start by preparing the marinara sauce. Cook some garlic in olive oil, then add tomatoes, salt, pepper, basil, and parsley. Let it simmer.
- Slice the eggplant and fry it until lightly browned on both sides.
- In a bowl, mix Italian seasoned breadcrumbs, panko breadcrumbs, salt, and pepper. Coat the eggplant slices in flour, dip them in beaten egg, and then coat them in the breadcrumb mixture. Fry the breaded eggplant until golden brown.
- In another bowl, mix ricotta cheese, mozzarella cheese, pecorino Romano cheese, chopped parsley, and chopped roasted garlic.
