Ingredients:
- 1 large white onion
- 3 garlic cloves
- 75g chopped chorizo
- 450g diced chicken breasts
- 1 tbsp tomato puree
- 1 tbsp smoked paprika
- pinch of saffron
- 1 chicken or vegetable stock cube
- 225g paella rice
- 75ml fairtrade white wine
- boiling water
- salt
- pepper
- 1 washed red pepper
- 100g frozen peas
- freshly chopped parsley
Cooking steps:
- Slice the ends off the large white onion, slice in half, then finely chop.
- Slice the ends off the garlic cloves, peel, then finely chop.
- In a large sauté pan, fry the chopped onion, garlic, and chopped chorizo for 5 minutes.
- Add diced chicken breasts to the pan and fry for another 5 minutes until the chicken is white all over.
- Add tomato puree, smoked paprika, saffron, and crumbled chicken or vegetable stock cube to the pan. Mix the ingredients together.
- Pour in paella rice and fairtrade white wine. Fry for 2 minutes until the white wine has evaporated.
- Top the contents of the pan with boiling water until the ingredients are just covered. Season with salt and pepper. Stir the ingredients together.
- Simmer the paella over a medium heat for 15 minutes.
- While the paella is simmering, slice the end off the red pepper, deseed, and slice into small chunks.
