Roasted Apple & Parsnip Soup Recipe - Creamy Parsnip & Apple Soup

Roasted Apple & Parsnip Soup is a delicious winter soup that combines the earthy flavors of parsnips with the sweetness of roasted apples. Inspired by a trip to a local gastro pub, this soup is creamy, silky, and full of flavor. By roasting the vegetables first, the flavors are intensified, resulting in a rich and satisfying soup. The roasted parsnips and apples are blended with a potato for extra creaminess. The soup is then seasoned with salt and a pinch of cayenne for added depth of flavors. Finally, cream is stirred in to give the soup a luxurious texture. Serve this soup hot and garnish with homemade blue cheese croutons, for an extra touch of flavor and crunch. This soup is perfect for a cozy winter evening or a comforting lunch.

  7. Water
  8. Cream
  9. Salt
  10. Cayenne Pepper
  11. Croutons
  12. Blue Cheese

Cooking steps:

  • Preheat the oven to 450 degrees. Peel and chop the parsnips into small pieces. Peel and slice the apples, removing the core.
  • Place the parsnips and apples on a foil-lined baking sheet. Drizzle with olive oil and sprinkle with kosher salt. Toss to coat.
  • Roast in the oven for about 30 minutes or until caramelized and tender.
  • Transfer the roasted parsnips and apples to a soup pot. Add the peeled and chopped russet potato.
  • Pour in the chicken broth and water. Stir to combine.
  • Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes or until the vegetables are very tender.
  • Use an immersion blender or regular blender to blend the soup until smooth and creamy.
  • Taste the soup for texture and decide if you want to strain it. Strain through a fine mesh strainer if needed.
  • Stir in the cream and adjust the thickness with additional broth if desired.
  • Season the soup with salt and a pinch of cayenne pepper.
  • Serve the soup hot, garnished with homemade blue cheese croutons, crumbled blue cheese, and fresh chives.
