Ingredients:
- 4 large russet potatoes
- 1 small onion
- Vegetable oil, for frying
- 3-4 eggs
- 1 cup panko breadcrumbs
- Salt, to taste
- Toppings of your choice (e.g., smoked salmon, cream cheese, pastrami, mustard, pickles, red pepper jelly, yogurt, pomegranate seeds, habanero, honey)
Cooking steps:
- Peel the potatoes and onion, then grate them on the large holes of a box grater.
- Rinse the grated potatoes and onion mixture under cold water to remove excess starch.
- Squeeze the grated potatoes and onion tightly in a clean kitchen towel to remove excess water.
- In a bowl, combine the eggs with the reserved potato starch. Mix well.
- Add the grated potatoes and onion mixture to the egg mixture, followed by panko breadcrumbs. Mix until well combined.
- Form the mixture into patties and flatten them to create crispy edges.
- Heat vegetable oil in a skillet to 375 degrees Fahrenheit.
- Fry the latkes on each side for about 4-5 minutes or until deeply golden brown and crisp.
