Kale Caesar Salad Recipe | Delicious Miss Brown

Are you tired of soggy and wilted Caesar salads? Try this recipe using tuscan kale, which is sturdy enough to hold up the thick Caesar dressing without getting wilted. Kale has a bad reputation for being bitter, but with the right preparation, it can shine in this salad. The Caesar dressing is thick and creamy, made with mayo, olive oil, Worcestershire sauce, garlic, anchovies, lemon zest, black pepper, and freshly shaved Parmesan cheese. Toss the dressing with the kale, and enjoy a tangy, cheesy, and refreshing salad that will satisfy your cravings.

Ingredients:

  1. Tuscan kale (about 1-2 bunches)
  2. 1/2 cup mayo
  3. 2 tablespoons olive oil
  4. Worcestershire sauce (a few dashes)
  5. 3 cloves of garlic, minced
  6. 2 anchovy fillets
  7. Zest and juice of 1 lemon
  8. Freshly cracked black pepper
  9. 1 cup freshly shaved Parmesan cheese (or more, to taste)

Cooking steps:

  • Wash the tuscan kale and remove the stems. Slice the leaves thinly.
  • In a bowl, whisk together the mayo, olive oil, Worcestershire sauce, minced garlic, anchovy fillets, lemon zest and juice, black pepper, and freshly shaved Parmesan cheese.
  • Taste the dressing and adjust the seasoning if needed.
  • Add the kale to the bowl and use tongs to mix it with the dressing until well-coated.
  • Serve and enjoy!
