Soft Muffins with Juicy Apple Bits and Crumble Topping Recipe

Today on Sugar Spun Run, we'll be making my apple crumb muffins. Hey Sugar Spun Bakers, Sam here! And today, I am so excited to be sharing another carefully tested, well researched, and perfected recipe. These apple muffins are super simple to make, so let's go ahead and jump right in. To start, preheat your oven to 375 degrees Fahrenheit. Peel and chop about 1 and a half cups of apples. Gala apples work well for this recipe. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1/2 cup of firmly packed light brown sugar, 1/4 cup of granulated sugar, 2 teaspoons of baking powder, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of table salt. In a separate mixing bowl or large measuring cup, combine 1/2 cup of either canola or vegetable oil, 1/2 cup of buttermilk, 2 large eggs, and 1 and a half teaspoons of vanilla extract. Whisk until well combined. Add the wet ingredients to the dry ingredients and gently fold together. Once partially combined, add the chopped apples and continue stirring until just combined. To prepare the streusel topping, combine 1 and 1/4 cups of all-purpose flour, 1/2 cup of firmly packed light brown sugar, 1/3 cup of granulated sugar, 1/4 teaspoon of salt, and 1/2 teaspoon of ground cinnamon. Stir together, then add 6 tablespoons of melted butter. Using a fork, combine the ingredients until you have a crumbly streusel mixture. Line a 12-count muffin tin with paper liners and divide the muffin batter evenly among the cups. Top each muffin with a generous amount of streusel topping. Bake for 23-25 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Allow the muffins to cool in the tin for 5 minutes before carefully removing.
