Easy Apple Cinnamon Coffee Cake Recipe | Perfect Fall Cake
Today we're making my easy apple cinnamon coffee cake, which is the perfect cake for fall. First, spray a 9 by 13 cake pan with nonstick cooking spray. In a medium mixing bowl, combine brown sugar and cinnamon, and stir until fully combined. Set aside two tablespoons for your apples. To continue making your streusel, add melted butter to the brown sugar cinnamon mixture and stir until combined. Then, add crushed graham cracker sheets and stir with a fork until combined. Next, place your peeled, sliced, and diced apples in a bowl and combine with the two tablespoons of brown sugar cinnamon mixture. Continue stirring until fully coated and combined.
To prepare your cake batter, combine sour cream, applesauce, oil, eggs, and vanilla extract in a large mixing bowl. Use an electric mixer and mix until smooth and combined. Next, add the yellow cake mix in two different batches and mix with an electric mixer until combined. Lastly, add in the diced apples and stir by hand until evenly incorporated.
Next, pour half of your cake batter into the prepared cake pan. Top with half of the streusel mixture, then top with the remaining cake batter and spread with a spatula until it is evenly distributed. Don't worry if it's messy; you're just going to add more streusel on top. Finally, top with the remaining streusel, making sure you don't miss any spots. Bake in the oven for 32 to 35 minutes or until a toothpick comes out clean.
While the cake is cooling, prepare your glaze by whisking together powdered sugar and milk in a small bowl. Whisk until it reaches a smooth drizzle consistency. Use a spoon to drizzle the icing on top. You can add as much or as little as you want.
