Easy Asparagus & Prosciutto Frittata Recipe - Weekend Breakfast

This recipe is super easy to make, super delicious, and the perfect thing to enjoy on a weekend morning. What I love about this frittata is that you can customize it with your favorite veggies. In this recipe, I'll be using red bell pepper, red onions, cherry tomatoes, and, of course, asparagus. But feel free to mix it up and add your own favorite toppings. You can even add mushrooms, broccoli, cauliflower, or kale into the frittata. To start, heat your omelet pan over medium heat and add a little bit of olive oil. Add the red onions, bell pepper, cherry tomatoes, and asparagus. Season with salt, black pepper, dried basil, and smoked paprika. Let these ingredients cook for about four to five minutes. While the filling is cooking, whisk together five large eggs, whole milk, salt, and black pepper in a separate bowl. Remove the asparagus from the pan and pour the egg mixture over the fillings. If desired, add your choice of cheese, such as goat cheese or cheddar cheese, on top. Return the asparagus to the frittata and cook over low heat for another four to five minutes, allowing the eggs to cook around the edges. Then, place the frittata under the broiler setting in the oven until the eggs are set and the top is golden. Finish off your frittata with prosciutto or any other toppings of your choice. Cooking steps:
