Sundried Tomato Pasta Recipe | Quick and Creamy | 20 Minutes
Love thunder tomatoes? Cook the pasta in a large pot of salted boiling water. Meanwhile, prepare a quick sun-dried tomato pesto using sun-dried tomatoes in oil, walnuts, chopped garlic, extra virgin olive oil, water, grated Parmesan cheese (or nutritional yeast for vegans), salt, and a pinch of red pepper flakes. Blend until reaching a thick and creamy consistency, adding water as needed. Optional: add fresh basil leaves. Drain the pasta and add it to a large mixing bowl. Top with a couple of tablespoons of pesto and some reserved pasta water. Stir until the pesto becomes a creamy sauce. Transfer the pasta into a bowl for a quick and easy dish.
