Ingredients:
- 1/2 pound shrimp
- 2 cloves garlic, minced
- 1 tablespoon freshly chopped parsley
- 1/2 teaspoon kosher salt
- Black pepper
- Olive oil
- 3 zucchinis
- 2 tablespoons unsalted butter
- Juice from half a lemon
- 1/3 cup dry white wine (or substitute with chicken broth)
- 1 roma tomato, chopped
- Fresh Parmesan cheese
- Chopped green parsley
Cooking steps:
- Marinate the shrimp by mixing minced garlic, chopped parsley, salt, pepper, and olive oil. Let it sit for 10 minutes.
- Spiralize the zucchinis using a spiralizer. Set aside.
- Melt unsalted butter in a pan and cook the shrimp for about one minute on each side. Transfer the cooked shrimp to a clean bowl.
- In the same pan, add minced garlic, lemon juice, and white wine. Cook for 2-3 minutes.
- Add chopped tomato and parsley to the pan. Return the shrimp to the pan and cook for another minute.
