Ingredients:

  1. 4 and a half cups liquid (2 and a half cups water, 2 cups chicken stock)
  2. 2 cups (168 grams) shredded cheddar cheese
  3. 1 bell pepper, chopped
  4. 3 green onions, chopped
  5. 3 cloves of garlic, minced
  6. Parsley, chopped (about 2 tablespoons)
  7. 1 teaspoon salt
  8. 6 slices of bacon, chopped
  9. 1 pound shrimp, peeled and deveined
  10. 1 teaspoon Cajun seasoning
  11. 3/4 cup chicken broth
  12. 3 tablespoons butter
  13. 1 tablespoon lemon juice
  14. Additional parsley for garnish

Cooking steps:

  • Fill a large pot with 4 and a half cups of liquid (water and chicken stock).
  • Grate two cups of cheddar cheese and set aside.
  • Chop the bell pepper, green onions, garlic, and parsley.
  • Bring the pot of liquid to a boil and add salt.
  • Slowly add the grits while whisking to avoid clumping. Reduce heat to low and cook, stirring occasionally.
  • Cook chopped bacon in a large skillet over medium-high heat until crispy. Remove from pan and set aside.
  • In the same skillet, cook the bell pepper until tender and then add shrimp, green onions, garlic, and Cajun seasoning. Cook for about a minute.
