Ingredients:
- 4 and a half cups liquid (2 and a half cups water, 2 cups chicken stock)
- 2 cups (168 grams) shredded cheddar cheese
- 1 bell pepper, chopped
- 3 green onions, chopped
- 3 cloves of garlic, minced
- Parsley, chopped (about 2 tablespoons)
- 1 teaspoon salt
- 6 slices of bacon, chopped
- 1 pound shrimp, peeled and deveined
- 1 teaspoon Cajun seasoning
- 3/4 cup chicken broth
- 3 tablespoons butter
- 1 tablespoon lemon juice
- Additional parsley for garnish
Cooking steps:
- Fill a large pot with 4 and a half cups of liquid (water and chicken stock).
- Grate two cups of cheddar cheese and set aside.
- Chop the bell pepper, green onions, garlic, and parsley.
- Bring the pot of liquid to a boil and add salt.
- Slowly add the grits while whisking to avoid clumping. Reduce heat to low and cook, stirring occasionally.
